5 Vege Beef Bolognese

Extra delicious & containing the goodness of 5 vegetables plus lean protein, this recipe is a family favourite of mine!
Prep & Cook Time : 1 1/2 hours Serves: 4 -6
Ingredients Olive Oil
1-2 tbsp Italian Herbs Spice (masterfoods)
Salt & Pepper
2 brown onions, diced
2 cloves garlic, finely diced
500g lean beef mince
4 large carrots, finely chopped
6 stalks of celery, finely chopped
1/4 cup tomato paste
2x 400g canned tomatoes
1/3 cup cooking red wine (optional)
pasta of choice (I use 500g fusilli)
parmeson & basil to serve (optional)
Directions
1. In a large pot, heat olive oil, add the onion and garlic plus Italian herbs, salt & pepper. Cook the onions for 2-5 minutes or until slightly translucent.
2. Add in the beef mince, breaking it up with a spatula, add more salt & pepper. Allow the meat to brown for 5 minutes.
3. Add the carrots, celery, tomato paste and canned tomatoes. Then add the cooking wine and stir well. Allow to simmer for 45 minutes-1 hour (the longer you leave it the more flavoursome it will become!).
4. 15 minutes before serving, cook the pasta according to instructions.
5. Serve the bolognese with pasta, fresh parmesan and basil (optional)
