Cacao Peanut Butter Protein Balls (V)

a deliciously healthy treat packed with goodies and ready in 10 minutes!

Makes: 8-10 medium sized balls

Prep & cook time: 10 mins


Ingredients

8-10 dates (soaked in hot water for a few minutes) ¼ cup peanut butter (I used crunchy) 1 tbsp cacao powder ¼ cup plant based chocolate protein powder 1 tbsp chia seeds

1 & 1/3 cup oats 1/3 cup shredded coconut 2-3 tbsp water (use as needed) ¼ cup Canadian maple syrup or rice malt syrup


Directions

1. Drain the dates and add into a food process along with all other ingredients apart from the water and maple syrup. Process until a course powder forms.

2. Add in the water and syrup until mixture sticks together. If mixture is dry add a little more water.

3. Roll into medium sized balls, you should get between 8-10.

Store in the fridge or freezer.

Note * these can be gluten free if you swap out the oats for almond meal
