Moroccan Beef Mince

A perfectly balanced healthy meal which is full of flavour



Prep & Cook Time : 30 minutes Serves: 4

Ingredients 1 tbsp olive oil 1 brown onion, chopped 1 garlic clove, chopped finely 1 tsp cumin powder 1/2 tsp cinnamon powder 1/4 tsp chilli powder Salt & pepper 500g lean beef mince 400g canned chickpeas, drained 1 cup chopped green beans (can use frozen or fresh) 1/2 lemon juiced handful fresh parsley 1 cup basmati rice, cooked according to packet instructions

Directions

1. Heat olive oil in a saucepan and add brown onion & garlic along with cumin, cinnamon & chilli powder.

2. Once the onion has become translucent and fragrant add the beef mince along with salt & pepper, using a spatula, break up the beef mince and cook for 2 minutes. You should see it starting to brown

3. Start to cook your rice, according to packet instructions.

4. Add the chickpeas and green beans to the beef mince, and cook for a further 10-15 mins on low or until you see the meat has been thoroughly cooked through. 5. Serve with fresh lemon juice, parsley and rice.
