Creamy Lemon Pasta

Full of flavour and ready in less than 20 minutes, this dish is also low fat!
Prep & Cook Time : 20 minutes Serves: 2-4
Ingredients Olive Oil 1 brown onion, diced 2 garlic cloves, diced salt & pepper 400mL can evaporated milk 1/3 cup parmesan cheese (plus extra for serving 1 lemon (you will use the rind and juice) bunch parsley, finely chopped 1 packet fettuccini or spaghetti (use half a packet if serving 2)
Directions
1. boil water in a kettle for your pasta, when this is done, pour into a pot and add in the pasta to cook.
2. In a pan , heat olive oil, add the onion and garlic plus salt & pepper. Cook the onions for 2-5 minutes or until slightly translucent.
3. Turn the pan down to low and add the evaporated milk.
4. Using a grater, add the lemon rind plus the juice of the lemon, parmesan and chopped parsley. Stir well to combine.
5. Allow the creamy sauce to simmer for for 5-10 minutes, on low. Add the drained pasta into the pan, mix the pasta to ensure it's coated with the sauce.
6. Serve with black pepper and parmesan
