Lean Chilli Con Carne

Super easy and tasty served with my special coriander and lime rice!

Prep & Cook Time : 1 1/2 hours Serves: 4 (or if you cook extra rice it can serve 6)

Ingredients Chilli Con Carne

1 brown onion, diced

500g lean beef mince Olive oil 1 400g can brown bean, drained 1 400g can canned sweet corn, drained 2x 400g cans diced tomato

Spice Mix (alternatively you can use packet taco seasoning) 3 tsp cumin powder 2 tsp coriander powder 1 tsp garlic powder

1 tsp onion powder 2 tsp chilli powder 2 tsp paprika powder Salt & pepper


Lime & Coriander Rice 1 cup basmati rice 1 tbsp vegetable stock powder 1 lime Coriander (I use the gourmet garden lightly dried brand at Coles & Woolworths, you can use a fresh bunch just finely chop it)


Directions Chilli Con Carne

1. Cook the diced onions with your spice mix in a pot with olive oil, stir until slightly translucent.


2. Add the beef mince, using a spatula to break apart, cook until the meat has slightly browned.


3. Add the brown beans, corn and diced tomato, stir well then leave on simmer with the lid on for 45 minutes-1 hour (ensure you check it every so often and stir).


Lime & Coriander Rice 1. Cook the basmati rice with 2 cups of water and vegetable stock.


2. Once the rice is cooked (the water should be absorbed), grate the zest of 1 lime into the rice then add the juice of the same lime. Add 1/4 cup of coriander to the rice.


3. Using a fork, fluff the rice ensuring the lime zest, lime juice and coriander is mixed through.


Serving instructions 1. Serve the Chilli Con Carne on top of the lime & coriander rice. I also serve it with sour cream, cheese and smashed avocado. You can also serve it with coriander and salsa.
