My go to Chicken Quinoa Salad

Super easy to put together and packed with protein and vegies

Prep & Cook Time : 30 minutes Serves: 4

Ingredients 1 cup Quinoa Grains 250g bag baby spinach 250g punnet cherry tomatoes, sliced in halves ½ cucumber, cubed ½ red onion, sliced thinly 1 cup feta, crumbed 1-2 chicken breasts (depending on serving size) Balsamic vinegar, olive oil, salt & pepper to taste

Directions

1. Cook 1 cup quinoa grains according to packet instructions (I add a tbsp of vegetable stock powder when the water is boiling for flavour). Once Quinoa is cooked, allow to cool at room temperature.

2. Whilst quinoa is cooling, cook chicken breast on a hot pan with olive oil, salt & pepper until cooked through. Set aside.

3. Assemble the salad by mixing quinoa grains, spinach, tomatoes and onion in a large bowl, toss to combine.

4. Slice the chicken breast into thin slices and serve on top along with crumbed feta.
