Protein Banana Bread

A fantastic protein & fibre rich breakfast option for those who are on the go!

Cooking time: 45 Minutes 170°C fan forced Makes: 7 thick slices or 9-10 thin slices

Ingredients 3 ripe bananas 3 tbsp greek yoghurt 1 tsp vanilla essence 2 eggs

1 cup oat flour 1/2 cup plain flour 1/2 tsp baking powder 1/2 cup coconut sugar 1/3 cup vanilla protein powder (40g) 1-2 tsp cinnamon 2 tbsp chia seeds


Directions 1. Preheat the oven to 170 C degrees, line a standard loaf pan with baking paper and set aside.


2. In a medium sized bowl, mash the bananas using a fork (or you can use electric beaters).


3. Add the greek yoghurt, vanilla essence and eggs. Mix well to ensure the wet ingredients are well combined.


4. In a seperate, large bowl, combine the dry ingredients, mixing well to combine.


5. Add the wet ingredients to the dry ingredients, using a spatula, fold through to ensure the banana bread mixture is well combined.


6. Pour the mixture in the loaf pan. Bake in the oven on fan forced for 45 minutes. Ensure it is cooked by placing a knife in the middle (it should come out clean).
