Raw & Vegan Bounty Slice

A healthy treat to curb that sweet tooth, perfect for all dietary requirements!
Prep & Set Time : 1 1/2 hours
Makes: 8 slices
Ingredients
Base
1 cup almond meal 1/3 cup coconut oil
Coconut Layer 2 1/2 cups shredded coconut 165mL can coconut milk 1/4 cup coconut oil 1/4 cup rice malt syrup
Chocolate layer 1/3 cup cacao powder
1/3 cup coconut oil 1/4 cup rice malt syrup
Directions 1. Line a standard loaf pan with glad wrap.
2. In a medium sized bowl, combine the base ingredients together. You want the consistency to just stick together when pressing with your hands (you can add more coconut oil if it's not sticking together).
3. Press the base ingredients into the lined loaf pan using a flat spatula, place in the freezer while you move onto the coconut layer.
4. In another medium sized bowl, combine the coconut layer together, mixing well to combine. Pour this on top of the almond meal base, pressing firmly with a spatula to flatten tightly. Place your pan back in the freezer.
5. In a small size bowl, combine the chocolate ingredients together, mixing well to ensure the cacao has dissolved. The consistency should be slightly runny to make it easy to pour.
6. pour the chocolate on top of the coconut layer, moving the tin to ensure it has evenly spread. Place this back in the freezer to set for approximately 1 hour.
7. When you can see that the chocolate layer has completely set, cut into medium sized slices.
