Spinach & Basil Pesto

Super easy and very versatile boosted with extra green goodness from spinach!
Prep & Cook Time : 15 minutes Makes: 1 1/2 cups
Ingredients
1 garlic clove 1/3 cup pine nuts (toasted in the oven for 10 minutes at 175C) 3 cups fresh basil 250g baby spinach 1 lemon, juiced 1/3 cup olive oil 1/3 cup parmesan (or nutritional yeast if wanting to make this vegan) salt & pepper
Directions 1. Add garlic in a food processor and blend until finely chopped.
2. Add the remaining ingredients and blend until they are all combined and smooth.
3. Store the pesto in an airtight jar. Drizzle extra olive oil on top to avoid oxidation and keep in the fridge.
4. Enjoy pesto mixed though pasta, roast vegetables, on toast, sandwiches and more!
